One of my favorite dishes to cook in my air fryer is this coconut prawn recipe. It really turns out great and has this amazing coconut-infused flavor especially if you use coconut oil when preparing it. Serves six.
- Prawns, 21 large w/shell
- White flour, 2 Tbsp.
- Egg, 1 large
- Dried coconut flakes, 6 Tbsp.
- Breadcrumbs, 6 Tbsp.
- Coconut oil, 1 Tbsp.
First shell the prawns but leave the tails on. Mix the coconut and breadcrumbs thoroughly in a bowl, beat the egg in a separate bowl, and place the flour in a 3rd bowl. Coat each of the prawns in flour, then dip in the egg, and then roll around the coconut mixture to coat evenly. Place in the air fryer along with the coconut oil. Other oils can be used instead of coconut oil, but I find the coconut oil gives this dish just that much more flavor.
Turn on the air fryer and cook for 6 – 9 minutes. Check to ensure prawns are cooked through before serving. I personally like these prawns served with a dish of honey for dipping, but seafood sauce works equally as well. Did you try this dish? Let me know how it turned out in the comments below!
