In a medium saucepan, bring some water to a boil. Add tofu and let simmer for approximately 15 minutes. Remove and squeeze out excess water. But into 1/2 inch cubes.
In a large mixing bowl, toss together all vegetables, soy sauce, vinegar, and spices until well coated. Set aside
Spritz the basket of your air fryer with sesame oil. Add the tofu and cook around 10 minutes at 400, flipping halfway through.
Once the tofu has cooked for 10 minutes, add the vegetables, tossing together with the tofu. Cook at 370 for 15-20 minutes, or until the vegetables have reached the desired texture.
Plate and Enjoy.
