While in San Francisco, I was introduced to this really cool vegetarian diner. I remember this one sandwich very well because I went back for it multiple times that week. So what was the sandwich that made me go back? A Ricotta and Spinach grilled cheese sandwich.
I did my best to recreate this wonderful sandwich. Although I love a standard grilled cheese, sometimes I just want something a bit different, and often times I want something a little on the lighter side.
Many grilled cheese sandwiches can be on the heavy side, often overloaded with cheese layers, and can include additions like bacon and avocado.
But let me be the first to tell you this Ricotta Spinach grilled cheese sandwich is different. It isn’t heavy at all and is actually super light, kind of like biting into a pastry.
To prepare this, I simply spread a thick layer of ricotta on two buttered pieces of brioche bread and added a handful of spinach. When cooked in the air fryer, the ricotta will expand into a delicious fluffy middle, with a smooth and creamy texture. The ricotta and brioche complement the spinach in the most perfect way.

Make this delicious and easy twist on air fryer grilled cheese
- 2 slices brioche bread
- 2 tbsp ricotta cheese
- 1 handful baby spinach
- 1 tsp butter, softened (to make it easier to spread)

Butter one slice of brioche bread, and place butter side down in the air fryer.

Spread the ricotta cheese on both slices of brioche bread

Sandwich the spinach between the cheese sides of the bread

Spread butter on the outer sides of both bread slices

Place in the air fryer and cook at 360°F | 182°C for 2 minutes

Flip the sandwich and cook for an additional 2 minutes at 360°F | 182°C.
