To be perfectly honest, I had my doubts about this one. While I am no hater of ricotta cheese (it’s divine in lasagna and some desserts), I wasn’t sure how it would be on a sandwich…
To my pleasant surprise, this ricotta and spinach grilled cheese sandwich was super light and delicious. While most grilled cheese sandwiches tend to be on the heavier side, loaded down with a variety of cheeses in addition to butter and other fattier ingredients like bacon or avocados, this sandwich was like biting into a pastry.
I simply spread a thick layer of ricotta on thickly sliced, buttered brioche bread and added a handful of spinach. As it cooked in the air fryer, the ricotta expanded into a delicious fluffy middle that made me think of a stuffed pastry puff. The sandwich itself had a mild, creamy flavor that complimented the spinach.
So…if you’re not super hungry or are looking to serve up some light fare for your family or guests, I highly recommend this delicious sandwich.
- 1 handful spinach
- 1/2 tsp butter
- 2 slices Sliced Brioche Loaf
- 2 tbsp Ricotta Cheese
Spread ricotta cheese on one slice of brioche bread
place spinach on top of ricotta cheese
put 2nd bread slice on top and spread butter on top of slice
place in air fryer at 360 °F for 2 minutes
flip grilled cheese, spread butter on top of slice. Cook at 360 °F for 2 minutes
plate, slice and enjoy!
