Who doesn’t love the savory flavor of mushrooms and swiss cheese? We eat this combination on our steak sandwiches, on our burgers, and even on our steaks. But if you’re wanting to indulge without the heavy protein, ditch the beef and try our mushroom swiss grilled cheese sandwich, cooked to crisp, buttery perfection in your air fryer.
This sandwich is pretty straight forward, but if you’re looking something a little different from the average grilled cheese sandwich, the mushroom swiss makes a great option. While you do have to precook the mushrooms in the skillet, once that’s finished, you can have this sandwich in and out of your air fryer in just under five minutes.
I recommend buttered French Brioche slices for the bread, which adds a sweet, yet savory flavor to complete the sandwich. You can’t go wrong with this one.

- 3 tbsp sliced mushrooms
- 2 slices swiss cheese
- 1 tbsp olive oil
- 2 slices bread we used brioche highly recommended

saute mushrooms in a skillet with olive oil. * we like to use our copper non-stick skillet for an even cook and quick clean up.

place cheese and sauteed mushrooms on 1 slice of bread

put the top slice of bread on. Then butter both outside slices of the bread.

place in the air fryer and cook at 400 ° F | 205 ° C for 2 minutes

flip grilled cheese and cook at 400 ° F | 205 ° C for another 2 minutes

plate and enjoy!
