This recipe is one you’ll definitely want to add to your meal rotation.
- 2 cups cooked white rice although we have a rice cooker, you can use minute rice, or frozen rice, if you want a quick solution.
- 1 cup frozen vegetables
- 3 tbsp vegetable oil
- 1 egg

In a medium-sized bowl, mix together frozen vegetables, pre-cooked white rice, NOT the egg at this time.

In a small bowl beat the egg with a whisk or fork.

Preheat air fryer to 350° F | 176° C for 5 minutes.

Spray a 7" cake pan with oil. Put the mixture in the cake pan in the air fryer

Cook at 350° F | 176° C for 10-12 minutes, stirring twice during cooking, making sure to chop up the egg as it hardens.

Pour the egg over the cooked fried rice, and cook for an additional 3-4 minutes, add any additional time you deem necessary.

Scoop into a bowl, and enjoy!
